An ancient monastery is located in the beautiful Castilian valley where monks lived in seclusion.
The monks planted a vegetable garden and fruit trees on the property’s grounds to provide fresh vegetables and fruits to all who lived there. In one part of the garden, the monks have vineyards, in addition to eating grapes, they also produce wine.
The winemaking is in the hands of Benedictum, a former monk who perfectly understands the more traditional method determined by the phase of the moon. This knowledge comes from his family, they are all winegrowers.
So it was only when he chose the ripest grapes, in the silence of the monastery’s underground cellar, that he carefully classified the wines that still follow the same pattern.
